I am a member of the UC San Diego Solar Car Team. We're looking for a lightweight form of protection for our solar cell array, preferably some type of epoxy (no glass - it weighs too much). What products are applicable?

You have to look for an epoxy that is UV stable. Most surfboard epoxy is - also make sure it is compatible with whatever foam or plastic your substrate is made of. If the substrate is curved, you will have to vacuum bag it.
